This Salade de Pois Chiche Nicoise is a vibrant, plant-based
twist on the classic Provençal dish—healthy, simple to make, and incredibly
flavorful. It’s a colorful mix of seasoned fried chickpeas, hearty purple and
red potatoes, sharp red onion, crispy radishes, savory Picholine olives,
capers, and tangy vegan feta. Finished with crisp escarole and endives, it’s
all tied together with a zesty Dijon vinaigrette.
Salad Recipe - Please use the photo on this post as inspiration, and feel free to customize this
salad with your favorite greens, veggies and plant-based toppings to create
your own masterpiece
Vinaigrette Recipe (2 servings) - Whisk 1/4 cup white balsamic vinegar, 1 tsp diced shallot, 1 tsp Dijon
mustard, 1/2 tsp dried thyme, and a pinch of salt in a bowl. Slowly drizzle in
1/4 cup olive oil while whisking continuously until thick and emulsified.
Drizzle over Salade de Pois Chiche Nicoise, or serve on the side.
