The beauty of making hummus at home is that you can play around with the Ingredients and make it with anything to your liking. I love to use varieties of beans, nuts, greens, fresh herbs and spices when making hummus such as this Simply Green Hummus packed with plant-based protein.
Perfect as an appetizer, but also as spread on sandwich breads, veggie & falafel wraps, paninis and much more!
So, let’s get started with the recipe.
1/4 Cup toasted pumpkin seeds
1 Cup cannellini beans (wash & pad dry if using it from a can)
1/4 Cup green olives
1 Tbsp. fresh lemon thyme or thyme leaves
2 Tbsp. extra virgin olive oil
2 Tbsp. Meyer lemon or lemon juice
1/2 Tsp. ground coriander seeds
1/2 Tsp. cumin
1 Tsp. Meyer lemon or lemon rinds
1. In a food processor add roasted chopped Tuscan kale, cannellini beans, green olives, spices, herbs, sea salt, garlic, extra virgin olive oil, Meyer lemon juice & rinds, pic. 1
2. Process until the ingredients are well incorporated. pic 2.
3. Add 1/4 cup toasted pumpkin seeds and process until the mixture is creamy, pic. 3.
4. Transfer to a bowl, garnish and enjoy!
