Santa Cruz Food Lounge offers beautiful indoor and outdoor seating with live music and it’s a perfect foodies event for yourself, friends and family.

Decadent Chocolate Covered Figs Recipe!



Greetings Figs & Chocolate Lovers!

If you love fresh figs and dark chocolates as much as I do, you'll love these beautiful and decadent Chocolate Covered Figs! They are fun to make and delectable to devour.

Makes 12 figs

Ingredients:
3-5 Ounce organic dark chocolate bar (70% dark is best)
12 Small-medium size fresh figs (green, purple or a mix of both)
1 Tsp. Orange zest
1/4 Tsp. Sea salt flakes
1/4 Cup chopped raw pistachios or any other nuts. I love pistachios b/c of their beautiful green color, which beautifully complements fig’s purple color.
1 Tsp. Organic lavender flowers
1 Tsp. Organic rose petals
1 Tsp. Organic calendula flowers
1/2 Tsp. Orange rinds
1/2 Tsp. Meyer lemon rinds

Chocolate Melting Instructions: Break or cut the chocolate bar into pieces and melt over a water bath or in a saucepan over very low heat. Alternatively, you can put them in a bowl, microwave on high for 30 seconds; stir, microwave again on for additional 30 second and stir again until chocolate is completely melted. Allow the melted chocolate to cool for 1-2 minutes, add the orange zest and stir 2-3 times gently. 

Chocolate Covered Figs Instructions:  Hold each fig by the stem, dip each fig in melted chocolate and transfer to a parchment-lined baking sheet. You can also cut a few figs in half and dip into melted chocolates to create a varieties of chocolate covered figs, they’ll make your artisanal creation even more beautiful. Next, sprinkle with chopped pistachios, lavender flowers, calendula flowers or rose petals and then 2-3 coarse sea salt.

Cooling & Packaging Instruction: Place the figs in the fridge for 1-2 hours to allow the chocolate to cool and harden completely before serving or packaging as gifts.

My students are awesome!

They rocked my Vegan French Baking & Wine Pairing Class: Sweet & Savory Tarts & Galettes on Saturday, June 29th at the beautiful Farm Discovery at Live Earth

They enthusiastically put on their eclectic aprons and beautifully collaborated with each other to make 5 exquisite dishes with organic ingredients from the Live Earth Farm, Santa Cruz Farmer's Market and local organic grocery stores. 

Plus, they made additional delicious dishes from the leftover veggies and fruits. We had an amazing farm-to-table baking and wine pairing class with zero waste. I love that!

Below are the exquisite dishes my awesome students made:

1) Strawberry Lavender Tart with crushed pistachios, and Strawberry Orange Lavender Compote with the leftover strawberries.  

2) Savory Summer Vegetable Tart with zucchini, yellow squash, purple and orange carrots and herbes de Provence, and sautéed Vegetable Medley with the leftover veggies from the tart.

3) Plum Almond Galette (a free-form rustic galette, since we had lots of sliced plums, which went over the dough). After that we still had more plums. So, they made a Plum Orange Lavender Compote, too. 

4) Savory Heirloom Cherry Tomatoes Galette with basil, almond, pistachios, garlic, olive oil and Meyer lemon juice and rinds pesto. 

5) Gourmet Salad with Butter Lettuce, French Radish, Green Olives, capers, pickled shallots and pickled watermelon radishes graced with Tarragon Mustard and Lemon-Herb Dressing

They enjoyed their exquisite culinary creations with McBride Sister's delicious wine, the Truvee Red Blend Central Coast 2013 and organic French roast coffee!  They took home a bottle of this delicious wine, plus a small bag of organic culinary lavender!
