Savory Lemon-Dill Hummus with Pita Bread

Lemon Juice & Rinds

White kidney beans, Dill & Garlic

Greetings Hummus Lovers!

The beauty of making hummus at home is that you can play around with the Ingredients. I use a varieties of beans and fresh herbs when making hummus!  This is my white kidney beans, lemon-dill hummus, which can be enjoyed with pita bread, naan, wholegrain crackers, veggies and even as spread on sandwich breads.

Ingredients (serving size 4):

1. One can white kidney beans (AKA Fagioli Cannellini bean), drained and rinsed.
2. 1/4 Tsp. sea salt
3. Two garlic clove pealed and smashed
4. 1/2 Tsp. ground Cumin
5. One cup fresh chopped dill 
6. One tsp. capers
7. One tsp. lemon rinds 
8. Two tbsp. freshly squeezed lemon juice 
9. 1/4 Cup Olive oil

Instructions: 

1. Add the first 6 ingredients in a processor and pulse until the mixture is coarse.
2. Add the last 3 ingredients, pic. 1 and process until the mixture is creamy, pic. 2
3. Transfer the hummus in a bowl, drizzle some olive oil, and garnish with lemon rinds, capers and chopped dill, pic. 3
